Kuih Dadar / Kuih Gulung 椰絲薄餅卷

This is one of those easy-to-make-crowd-pleasing dessert!
The faint pandan fragrant of the wrap combined with the sweet and juicy coconut shreds inside.

Need I say more?

Kuih Dadar Recipe

Wrap ingredients:
1. flour - 180g
2. egg - 1
3. salt - 1/3 tsp
4. pandan leaf juice - 350ml

Filling:
1. grated coconut - 1
2. (120g) palm sugar - 1
3. salt - 1/2 tsp
4. water - 3 tbsp

Method:
1) To make the wrap, beat the wrap ingredients in a mixer until smooth. Remove and rest for 30 minutes.

2) To make the filling, cook the palm sugar with water until dissolved. Add in grated coconut, stir well. Thicken with a little cornstarch (dissolve cornstarch in water first). Remove and leave to cool.

3) Heat up a little oil in the frying sauce pan. Spoon enough batter into the frying pan. Shallow-fry over low heat until cooked and slightly burned on both sides. Repeat and finish the remaining batter.
