Apple Chicken Salad (苹果鸡丁沙律)

A nutritious and low-carb diet - slimming down doesn't have to be tasteless!

Recipe
Ingredients:
1. apple - 1
2. chicken breast - 1
3. celery (西芹) - 2 sticks
4. crushed walnut (核桃) - 1 tbsp

Dressing:
1. honey - 2 tsp
2. mayonnaise - 4 tbsp
3. yellow mustard - 3 tsp
4. salt - 1 tsp

Method:
1) Dice chicken breasts into small cubes. Cook in hot water (not boiling) for 3 minutes or until cooked. Remove and set aside for later.

2) Dice apple and soak in salt water (to prevent it from turning brown - a result of oxidization). Peel the coarse fiber from the celery and dice. Season diced celery with 1 tsp of salt.

3) Put all the dressing ingredients together and mix well. Add in chicken, apple, celery, and crushed walnut. Mix well, and serve.
