Shrimp Thai Fried Rice with Tomato Sauce 茄汁虾泰式炒饭

Longing for an easy savory dinner, I tried this Thai fried rice recipe the other day.
The result was .. of course it was good, else this recipe won't make it to my collection here. ;)

Ok enough boosting.
The fried rice is a perfect mix of savory, sweet and sourness.
You can taste the shrimp, the tomato sauce, the lemon juice and the cilantro.
None of each overpowers the others!

And, it's easy to make.

Mmmm... just recalling the taste makes my mouth watering! ;p~

Recipe
Serves two.

Ingredients:
1. 8 - 10 medium-sized shrimps, cleaned, shelled and de-vined
Note: Less convenient to eat, but I prefer large shrimps with shells and heads on. The juice from the heads add color and amazing seafood flavor to the fried rice.

2. 2 tablespoons smashed garlic

3. 1 onion, sliced

4. 50g pea (optional)

5. 2 tbsp fish sauce

6. 3 tbsp tomato sauce

7. 4 cups steamed rice
Note: if still hot, let it cool down before cooking

8. cooking oil

9. 1/4 teaspoon ground pepper

10. 1/2 teaspoon sugar

11. cilantro, cucumber, scallion (for garnish)

12. lemon, halve (serve with fried rice)

Method:

1. Heat oil in a wok over medium heat. Add garlic, and stir til golden and fragrant. Then add shrimps, and keep stirring until nearly done.

2. Add onion, pea and tomato sauce. Stir fry until all mixed well. Turn to high heat, then add steamed rice.

3. Season with fish sauce, ground pepper, and sugar. Stir quickly until all ingredients mixed well. Remove from heat.

4. Transfer to a serving plate. Garnish with cilatro leaves. Serve immediately with lemon (halve) and prepared vegetables (sliced cucumbers, scallion, etc.) and chopped chili in fish sauce.
